Instead of game kiosks, my vidya childhood was built on renting from Blockbuster. However the most fond memories I had regarding game demos was playing Sonic Heroes in McDonald's of all places.
Also I think the "closest" of that experience that still exists "today" is downloading the random PSP demo you can find floating around Archive.org and playing them on an actual PSP (That is, if you have one). Playing the kiosks for modern systems just isn't the same.
