Simple Tea Cake
The recipe is for size of 11 inch (28 cm) baking pan.
If you baking pan is smaller, cut ingredients amount.
2 Eggs
1.5 cup sugar
4 Tsp any jam or preserve
1 tsp baking soda
1 tsp baking powder
2 Tsp of olive oil or any oil you prefer
1 lemon (zest and juice)
pinch of vanilla
1 cup of black tea (strong)
1 cup of dry apricot
1 cup of raisins
3 cups of flour
First make a tea. The tea s/b strong.
Wash dry fruits, cut apricot and soak apricots and raisins in tea.
Keep soaked until cool. Mix all ingredients together including soaked fruits and tea the fruits was in. Put into baking pan and bake for 350 degree F for 1 hour. The baking time could be more or less, depends on the baking pan size and oven you have. Enjoy!!!
